
The word crepe is French. In the States, they do follow the French pronunciation and call it [kʀεp]. Crepe could seem difficult to make with fancy crepe pans out there. But it's easy. It's just a thin pancake! And there is no need for a crepe pan. You can make it with any kind of non-stick pan. And making crepe batter is even easier than making pancake batter. There is so much liquid in the batter that it is impossible for flour to develop gluten. So you can mix it as vigorously as you want to. You can even use a food processor. You can enjoy crepe with tons of different fillings. But sugar and lemon filling is my favorite.

Makes 8-10 lemon sugar crepres:
2 tablespoons unsalted butter
Sugar (for filling)
1 lemon
1/2 teaspoon vegetable oil
1 cup unbleached all-purpose flour
1 teaspoon sugar (for batter)
1/4 teaspoon table salt
1 1/2 cups whole milk
3 large eggs

Melt the unsalted butter in the microwave oven for about 30 seconds. Put aside to cool.

Prepare sugar and lemon for the filling as shown in the picture.

Put the non-stick pan over low heat and add the vegetable oil. Using a non-stick pan is recommended here because crepe can stick to the surface if you use a stainless steel pan.

For the batter, mix flour, salt, and sugar in a bowl. In another mixing bowl, whisk eggs and milk. Pour half of the liquid mixture into the dry mixture and whisk until smooth. Add the butter and whisk more.

Add the remaining liquid mixture and whisk until smooth.

Return to the preheated pan and wipe the vegetable oil with a piece of kitchen towel to coat the surface.

Test the temperature of the pan by cooking a bit of the batter. Flip after 20 seconds. If the side is browned as shown in the picture, the pan is ready. Use a 1/4 cup measuring cup to pour the batter on the far side of the pan. Swirl the pan quickly. Let it cook for 25 seconds. The edge should become dry and frilled. Flip and cook the other side for 20 seconds.

Stack the finished crepes over a cooking rack.

I ended up with 8 crepes. Prepare two large plates and place the crepes you want to serve in between. I had two crepes in there. Heat in the microwave oven for 30 seconds. Sprinkle sugar on the half side and fold into quarters.

Serve with the lemon wedges. I had it with coffee for my brunch.

Add plenty of freshly squeezed lemon juice.

The thin pancake, crepe! I love the thin layers. I do love pancakes, too. But crepes seem more special and fancy.

My cat, Hayo, is always sleepy in the morning. I love her pink paw pads! But she has long strands of fur between them. I heard most Turkish Angora cats have them. But her paws are still so cute!
